The Ladurée macarons
The history of the Ladurée macaron is all tangled up with the history of our house itself. As inheritors of a patisserie skill that's been carefully nurtured down through the years, Ladurée has managed to elevate the macaron to a proper art form. It was Pierre Desfontaines, cousin of our founder, who first had the idea of sandwiching two almond shells around a ganache filling in the 1930s. A quiet invention that changed everything.
What makes a Ladurée macaron
Three things, really: a precise technical achievement, a sensory experience, and a small piece of living history. The ingredients are simple. Almond flour, egg whites, sugar. That simplicity is exactly what makes it unforgiving. Each shell needs to develop its pied at the base, and give way at just the right moment. Nothing decorative about any of it.

The texture of the Ladurée macaron is a proper tactile and tasty experience. The shell, ever so fine and with a delicate crispness, gives way to a soft and squidgy centre where the ganache shows off its subtle flavours. That perfect balance is down to meticulous skill and a keen eye for detail at every stage of its making.

The craft behind every shell
The macaronage, that particular folding motion that gives the batter its flow, is one of those things you can explain in a sentence and spend years learning to do properly. Temperature, humidity, resting time: all of it matters, none of it is automatic. Today, that work is led by Julien Alvarez, our Chef Pâtissier and World Pastry Champion. He treats the founding recipes as a foundation, not a ceiling.
